Hello #MondayMuse family =) I’ve been pretty occupied for the past two week, specifically with my YouTube channel start up. Hence I wasn’t able to sit down and properly write you something from the heart. Or more accurately, something more than just another recipe. Hopefully next week onwards we’ll see some fresh posts but as of now, here’s the finalised Healthy Homemade Chocolate Ice Cream from my kitchen to yours. Enjoy!
What you’ll need:
1 cup Coconut Milk (Santan)
1 cup Coconut Cream
1 tsp Vanilla Extract
1 frozen Banana (peeled and diced, so that it blends easier)
3 tbsp Cocoa Powder
2 tbsp Cane Sugar (or any type of sugar really)
Handful of Chocolate Chips
What you’ll do:
- Pour the coconut milk and coconut cream into a Ziplock bag then pop it into the freezer overnight. Be sure to lay the bag flat, so that you can break them into pieces easily for blending purposes.
- The next day, in a high speed blender, blend the frozen coconut mix first. Once you see a smooth-smoothie-like texture, add the rest of the ingredients. And again, blend them all until you obtain a smoothie-like consistency.
- Finally, pour the mixture into a metal loaf tray. Freeze for at least another 3 hours then serve! (ps: Be sure that you opt for a loaf tray that is relatively deep so that you can scoop the ice cream easily)
It is really that simple! I made these twice already so far and I love them. Let me know if you tried it my friends.
